One of my mom’s most commonly used phrases is “breakfast is the most important meal of the day.” I’ve heard of multiple studies that back up her claims but sometimes it’s hard to commit to eating breakfast at all, much less a healthy one. Cold cereal may be some people’s idea of a good meal but most mornings that shredded wheat might as well be shredded paper to me.
One of my goals recently has been to skip breakfast less. Since I’m not a fan of the all-American breakfast-on-the-go thing, it’s been necessary to take a more unusual approach to breakfast.
One of the things I’ve most enjoyed about having a garden this year is the ability to pluck something off the vine each morning and put it straight into my breakfast. Earlier in the year we regularly feasted on sauted kale with garlic or Southern style collard greens, topped with a fried egg each. Now that the kale has bolted and the collards have about run their course, we’re moving on to some classic summer vegetables. Today’s breakfast was a saute of fresh zucchini, green bell pepper and these beautiful All-Blue potatoes, all of which were straight from our own backyard. Add a mug of french press coffee, a glass of orange juice, toast and an egg over easy and you might as well be in heaven. When breakfast is this good, it’s easy to believe that it’s the most important meal of the day. Making a veggie-laden, hearty breakfast with ingredients from your own garden is probably the true breakfast of champions.

those blue poteezies are beautiful! glad you guys are enjoying the fruits of your labors. i’ve been housesitting and getting to reap a little harvest from that garden, so lately we’ve been getting fresh zucchini each day for dinner. so nice to eat something that was just plucked! now if only i could drag myself out of bed early enough to make a good breakfast before school…
Not gonna lie, being unemployed definitely helps when it comes to having the time to cook a good breakfast! Still, I usually wait until Nato is off work to really go all out.
